:ﻃﺮﻳﻘﺔ اﻟﻌﻤﻞ
ﰲ ﻗﺪر ﻋﻤﻴﻖ ﻧﻀﻊ اﻟﺪﺟﺎج وﻧﻐﻤﺮه ﺑﺎﳌﺎء
.وﻧﻀﻊ اﻟﻘﺪر ﻋﲆ ﻧﺎر ﻣﺘﻮﺳﻄﺔ ﺣﺘﻰ ﻳﻐﲇ اﳌﺎء
ﻧﻀﻴﻒ اﻟﻘﺮﻓﺔ واﻟﻬﻴﻞ واﻟﻐﺎر واﳌﻠﺢ وﻧﺪع
.اﻟﺪﺟﺎج ﻋﲆ اﻟﻨﺎر ﳌﺪة ٣٠ دﻗﻴﻘﺔ ﺣﺘﻰ ﻳﻨﻀﺞ

ﰲ ﻗﺪر ﻣﺘﻮﺳﻂ اﻟﺤﺠﻢ ﻧﻀﻊ اﻟﺒﺼﻞ اﳌﻔﺮوم
وﻧﻘﻠﺒﻪ ﻋﲆ ﻧﺎر ﻣﺘﻮﺳﻄﺔ ﻣﻊ زﻳﺖ اﻟﺰﻳﺘﻮن
.ﺣﺘﻰ ﻳﻨﻀﺞ اﻟﺒﺼﻞ. ﻧﻀﻴﻒ ﻣﻠﺢ وﻓﻠﻔﻞ وﺳماق

ﻧﺄﺧﺬ ﻗﻠﻴﻼ ﻣﻦ اﻟﺰﻳﺖ اﻟﺬي ﻗﻠﻴﻨﺎ ﻓﻴﻪ اﻟﺒﺼﻞ
.وﻧﺪﻫﻦ ﺑﻪ اﻟﺪﺟﺎج وﻧﻀﻌﻪ ﰲ اﻟﻔﺮن ﺣﺘﻰ ﻳﺘﺤﻤﺮ

ﰲ ﻃﺒﻖ اﻟﺘﻘﺪﻳﻢ، ﻧﻀﻊ اﻟﺨﺒﺰ ﺑﻌﺪ أن ﻧﺪﻫﻨﻪ
ﺑﺰﻳﺖ اﻟﺒﺼﻞ، ﺛﻢ ﻧﻀﻊ اﻟﺒﺼﻞ وﻗﻠﻴﻼ ﻣﻦ
اﻟﺴماق ﺛﻢ ﻧﻀﻊ اﻟﺪﺟﺎج واﻟﺼﻨﻮﺑﺮ ﻟﻠﺘﺰﻳين
وﺑﺎﻟﻬﻨﺎء واﻟﺸﻔﺎ

ﻓﺆاد وﺷﻮق-

Directions:

  1. Cook the Chicken:
    • In a deep cooking pot, place the chicken and cover it with water.
    • Place the pot over medium heat and bring the water to a boil.
    • Add cinnamon, cardamom, laurel leaves, and salt.
    • Cook for 30 minutes until the chicken becomes soft.
  2. Prepare the Onions:
    • In a medium pot, add the chopped onions and olive oil.
    • Stir over medium heat until the onions soften.
    • Add salt, black pepper, and sumac, then mix well.
  3. Roast the Chicken:
    • Take a small amount of the oil used for frying the onions and brush it onto the chicken.
    • Place the chicken in the oven and roast until it turns golden brown.
  4. Assemble the Dish:
    • Brush the pita bread with onion oil and place it on a serving dish.
    • Add a layer of onions and sprinkle a little sumac.
    • Top with the roasted chicken and decorate with pine nuts.
